Guest speakers Dr Yasmina Sultanbawa and Dr Heather Smyth from the Centre for Nutrition and Food Sciences will talk about their career path in the flavour and food sciences and about some of their projects and career highlights.
The Centre for Nutrition and Food Sciences (CNAFS) is within the Queensland Alliance for Agriculture and Food Innovation (QAAFI). QAAFI is jointly funded by the Queensland Department of Agriculture and Fisheries and the University of Queensland.
Dr Yasmina Sultanbawa
Dr Sultanbawa's research ranges across a number of areas embracing food processing, preservation, food safety and nutrition. Her research includes the search for natural preservatives to replace current synthetic chemicals to minimise losses from food spoilage. In addition she investigates the nutritional potential of Australian native plants. This research involves working with indigenous communities. The creation of employment, economic and social benefits to these remote communities is an anticipated outcome.
Dr Heather Smyth
Dr Heather Smyth is a flavour chemist and sensory scientist who has worked with premium food and beverage products for more than ten years. With a background in wine flavour chemistry, Heather’s expertise is in understanding the compositional basis of the sensory properties and consumer enjoyment of foods. Her research helps to identify what makes different foods smell and taste good. Some current projects involve specialty coffee, beer, wine, native plant foods, cocoa, meat and seafood, tropical fruit, cereals and dairy products. Heather collaborates with a number of companies and research groups to discover new ingredients and processes to help produce superior foods with increased consumer value.
